As we have completed our juice cleanse and reset our body and mind. We are feeling re-energised and inspired make a conscious effort to nourish our bodies with wholesome and nutritious foods to glow from the inside out! Jade from our favourite vegan foodie blog, @panaceas_pantry has kindly shared her favourite post yoga morning meal, vanilla + macadamia chia with ginger blueberry compote and granola. How delicious! 
Chia pudding is a great post practice food as it’s packed full of planted based protein, fats and fibre (making it filling, too) as well as being light and easy to digest. This recipe uses whole food ingredients, is naturally vegan and paleo friendly and is warming even in winter with the hot blueberry ginger compote. 

Vanilla + macadamia chia with ginger blueberry compote and granola.

(Serves 2) 

 

You’ll need

 

1/3 cup chia seeds 

1 cup macadamia milk 

1/3 cup plain coconut yoghurt

1/2 tsp vanilla extract 

1/2 cup frozen blueberries 

1/2 tsp finely grated fresh ginger

Granola of choice

Extra toppings (optional): any dried or fresh fruit, nuts, seeds or shredded coconut. 

 

Method

 

  1. Add the first 4 ingredients to a small mixing bowl and whisk together. Set aside for 15 mins or until thickened. 

 

  1. Meanwhile, add berries, ginger and 2 Tbsp water to a saucepan. Bring to the boil then reduce heat to low and simmer for 10 mins or until berries have softened completely, and start to become jammy  texture. Add a splash more water if necessary. 

 

  1. To serve, give chia a final whisk and ensure you break up any lumps that may have formed. Divide between 2 bowls, and top with freshly cooked blueberries, granola and optional extras.
