Post Yoga Chia Pudding From @panaceas_pantry
Vanilla + macadamia chia with ginger blueberry compote and granola.
1/3 cup chia seeds
1 cup macadamia milk
1/3 cup plain coconut yoghurt
1/2 tsp vanilla extract
1/2 cup frozen blueberries
1/2 tsp finely grated fresh ginger
Granola of choice
Extra toppings (optional): any dried or fresh fruit, nuts, seeds or shredded coconut.
- Add the first 4 ingredients to a small mixing bowl and whisk together. Set aside for 15 mins or until thickened.
- Meanwhile, add berries, ginger and 2 Tbsp water to a saucepan. Bring to the boil then reduce heat to low and simmer for 10 mins or until berries have softened completely, and start to become jammy texture. Add a splash more water if necessary.
- To serve, give chia a final whisk and ensure you break up any lumps that may have formed. Divide between 2 bowls, and top with freshly cooked blueberries, granola and optional extras.
